One of the only reasons I wake up in the morning is so that I can eat these delicious egg white muffins once I get to work. Breakfast is truly the best meal of the day and I love mixing it up. Overnight oats, banana bread, cereal, omelettes, toast... you name it, I'm into it. However, these little egg muffins have been my go to for a while now. I make them in big batches so I can just wake up and go. Another plus is that they are super easy to make. I am not about spending hours in the kitchen. Ingredients: Egg Whites Cut up veggies (I use peppers, but this is just a personal preference) Cheese Wasa Crispbread Instructions: 1. Preheat the oven to 350 degrees 2. Grease muffin pan with cooking spray 3. Pour the egg whites into the pan 3. Sprinkle in some cut up veggies 4. Finish off with a little bit of cheese 5. Stick them in the oven for 20-25 minutes, voila! 6. Let the muffins cool for about 5 minutes before taking them out of the pan Once I get to work I put them in the microwave for about 2 minutes. I pair them with two wasa crisp crackers for a yummy breakfast. Enjoy! Xo, Kayla
