Ever since I watched the movie The Sandlot as a child, I have had an obsession with s'mores. However, I can't really eat s'mores 5 days a week so I've opted for this healthy alternative. These Banana S'more Blondies are gluten & dairy free and taste pretty damn good. They are super simple to make too! I like to have these for breakfast or for an after-dinner treat to satisfy my sweet-tooth. See recipe below: Ingredients: Dry Ingredients: 1. 2 cups of gluten free oats 2. 4 gluten free graham crackers —- can also sub for the real deal 3. Dark chocolate 4. Vegan marshmallows (I used dandies)— can also sub for the real deal Wet Ingredients: 1. 1 egg (can sub for a flax egg if vegan) 2. 1 tbsp of coconut oil 3. 1 ripe banana 4. 1/4 cup of almond milk (feel free to add more if needed) Recipe: Time: 20 minutes Yields: About 6 1. Set oven to 350 2. In one bowl mash up ripe banana. Add egg, coconut oil, and almond milk to the bowl and mix. 3. In a separate bowl mix the graham cracker crumbs and oats. 4. Combine both bowls and mix well. 5. Add dark chocolate chips to the mix. 6. Pour mix into a nonstick cake pan. 7. Top with marshmallows and crumbled graham cracker. 8. Last night I was craving something sweet, but didn't feel like going to the grocery store. Thankfully I had two ripened bananas handy (aka the essential item for healthier sweets) and some other staples. The result... Peanut Butter Banana Oat Cookies! These cookies only require 6 ingredients and taste fuego. I am all about recipes that have minimal ingredients and take less than 15 minutes to make, so these cookies will probably become a once a week type of thing.

* Remember these are a healthy alternative- aka they will never taste like a Levain Bakery cookie (nor should they because nothing compares)- but they do satisfy the sweet tooth! While I am all for using clean ingredients, sometimes I just can't afford to spend $40 to make cookies. I am trying my best to create recipes that are easy, and won't break the bank. Most of you can probably make this with what you have in your home right now. These 4-ingredient peanut-butter protein bites are mushy peanut-butter goodness and only require oats, cinnamon, 1 banana, and peanut-butter. See below for the recipe! 4- Ingredient Peanut-Butter Protein Bites Prep Time: 5-10 minutes Total Time: 8 hours Yields: 6-8 (depending on size of bites) Ingredients: 1/2 cup of Oats (I use gluten-freeda) 1/4 Cup of Peanut-Butter (I use crazy richards) 1 tbsp of Cinnamon *can add more for taste 1 Banana Optional Add Ins: Chocolate Chips 1 tbsp of Vanilla Extract Honey Recipe: 1. Mix all ingredients into a bowl 2. Once smooth, roll into balls and put on a plate 3. Place plate in the refrigerator and leave overnights 4. Xo, Kayla One of the only reasons I wake up in the morning is so that I can eat these delicious egg white muffins once I get to work. Breakfast is truly the best meal of the day and I love mixing it up. Overnight oats, banana bread, cereal, omelettes, toast... you name it, I'm into it. However, these little egg muffins have been my go to for a while now. I make them in big batches so I can just wake up and go. Another plus is that they are super easy to make. I am not about spending hours in the kitchen. If you're like me, check these babies out and let me know what you think.
Ingredients: Egg Whites Cut up veggies (I use peppers, but this is just a personal preference) Cheese Wasa Crispbread Instructions: 1. Preheat the oven to 350 degrees 2. Grease muffin pan with cooking spray 3. Pour the egg whites into the pan 3. Sprinkle in some cut up veggies 4. Finish off with a little bit of cheese 5. Stick them in the oven for 20-25 minutes, voila! 6. Let the muffins cool for about 5 minutes before taking them out of the pan Once I get to work I put them in the microwave for about 2 minutes.
